noun salsifies
    1. A biennial plant with a long white cylindrical tap root, grass-like leaves and large solitary heads of violet-purple flowers surrounded by bracts.
    2. The edible flesh root of this plant which can be boiled or baked and eaten as a vegetable, having a flavour resembling that of oysters.
    3. The young leaves of this plant, which are sometimes used in salads. See also oyster plant.
